Welcome to my cooking sub-page where I reveal my best recipes. Those were invented/refined during the 2020 quarantine.
All are vegan frendly 🥗 and moslty gluten free 🆓.

BASIC PANCAKES 🥞 ----------------- Ingridients: - Flour (500-550) - Very hot tap water 🚰 - Salt 🧂 - Olive oil 🫒 - Honey 🍯 Mix all the things together. Hot water is important. Make final dough that's funneling. Fry on hot pan.
PANCAKES VARIATIONS 🥞 ---------------------- #1 Red Tomato Ingridients over usual pancakes: - Herbs de Provence 🌿 - Red pepper powder 🌶️ - Baking soda (little) #2 Protein Ingridients over usual pancakes: - Protein shake powder (one serving) #3 Fried Potato Ingridients over usual pancakes: - fresh, young poptatos Slice the potatos into super thin layers. Frie them on the pan in lots of plant based oil. Add lot of spices! When brown throw them into the pancake dough.
YELLOW RICE 🍚 BASE ------------------- Ingredients - Rice 🍚 - Honey 🍯 (or vegan replacement like Maple Syrup) - Curcuma - Salt 🧂 - Pepper 🌶️ Fill the rice with water 1:1 💧. Boil ⚗️ slowly for 10min ⏲️. Add more water 💧 if rice soaked all of it. Add the rest of the ingredients. Stir and wait another 10min ⏲️. The rice should be very sticky at the end - resembles pudding or mashed potatoes a little bit. This is just a base. Add anything you like. Fresh vegetables 🥒, canned green pea 🥫, smashed tomatoes 🍅 or whatever you prefer.
COFFEE ☕ AROUND THE WORLD 🌍 ------------------------------ Coffee is known to anyone in the world. It's the most used drug. Let's make it more exciting by trying recipes from around the world. I choose only those I like and drinking often. They are easy to make with common ingredients. Each of the recipes includes espresso and some unusual addition. It speaks for itself how to prepare it :) ** Kopi Jahe ** from Indonesia Prepared with ginger roots. Optionally add herbs 🌿: cinnamon, cardamon and sweetener like honey 🍯. ** Mazagran ** from Catalonia Served with ice 🧊 and lemon 🍋 juice. Citrus boosts ⚡ caffeine effects. ** Melya ** unknown origin Unsweetened powdered cocoa and honey 🍯. Cocoa is also a very old drug used by Aztec.
POLISH SAMOSA 🥟 ---------------- Remix of a Samosa (https://en.wikipedia.org/wiki/Samosa), fried or baked pastry with a savoury filling. Ingredients - Crust - Potatoes 🥔 - Wheat flour - Olive oil 🫒 - Salt 🧂 - Pepper 🌶️ - Chia seeds - Stuffing - Cucumber 🥒 - Zucchini - Carrots 🥕 - Canned Green pea 🥫 - Canned corn 🌽🥫 - Fresh tomato 🍅 - Italian tomato sousage 🍅🥫 - Salt 🧂 - Pepper 🌶️ - Honey 🍯 (or vegan replacement like Maple Syrup) Peel potatoes 🥔 and carrots 🥕 and cut into small pieces. Put to boiling water 💧 and boil till soft (~10min). Soak chia seed with little water. Take the potatoes and smash them good. Add flour and a lot of olive oil 🫒. Also some salt 🧂, pepper 🌶️ and soaked chia seed. Mix and knead until the dough is stiff. Add olive oil or flour if needed. Put for a few minutes aside. Take carrots and all other veggies and add olive oil and spices. Mix it all. Prepare pan 🍳 with a lot of olive oil 🫒. Make it hot ♨️. Now take the dough and make small pancakes. Put a hand of veggies on the center and file to form a cone/dumpling 🥟. Put into the pan 🍳 and fry from both sides until golden brown. If all went well the samosa pieces should have hard shells with a very soft inside. Almost like a cheese 🧀.
POLISH RAMEN 🍲 --------------- Ingredients - Wloszczyzna (soup vegetables) - Carrots 🥕 - Celery root - Parsley root - Parsley top 🌿 - Zucchini - Potatoes 🥔 - Red paprika 🫑 - Canned Green pea 🥫 - Canned corn 🌽🥫 - Olive oil 🫒 - Salt 🧂 - Pepper 🌶️ - Soya sauce - Chinese type noodles 🍜 Take a big pot and fill it with cold water 💧. Heat the water until boiling. Peel vegetables and cut into smaller pieces. Put all ingredients into the pot. Simmer until the hardest veggie will be soft. Prepare Chinese type noodles 🍜 - usually just fill with boiled water and wait ~4mins. Then drain off the noodles. Add the soup and enjoy 🍲 :)
RICE PANCAKES 🍚🥞 AS BREAD REPLACEMENT 🍞 ------------------------------------------- Remix of a Pathiri (https://en.wikipedia.org/wiki/Pathiri), a pancake made of rice flour. Ingredients - Rice 🍚 - Rice flour 🍚 - Corn flour 🌽 - Honey 🍯 (or vegan replacement like Maple Syrup) - Olive oil 🫒 - Salt 🧂 - Pepper 🌶️ - Rice drink (milk replacement) 🥛 - Chia seeds First made the rice for sushi 🍣. But even more wet and overcooked a little bit. Put chia seeds in water to soak while rice is in the making. Take the rice to cool down. Add rice and corn flour in 1:1 mix. Add the rest of the ingredients and mix it up. Add good amount of oil. The dough should be wet and soft but holds a spoon 🥄 straight. Warm up the pan 🍳 and add sufficient oil 🫒. Put a few small pieces of dough and form pancakes 🥞. Fry on both sides until golden/little brown. Use this as normal bread sandwiches 🥪. Peanut butter 🥜🧈 and honey 🍯. Cheese 🧀 and tomatoes 🍅. You get the idea.
